Parsnip Soup

The parsnip is just about the most under valued root vegetable (in my opinion). But this parsnip soup recipe really lets the amazing flavor of the parsnip shine through. You are sure to have a new respect for the parsnip after you try this!

  • 4 parsnips, peeled and medium diced
  • 1 onion, medium diced
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 3/4 cup heavy cream
  • 1 cup chicken stock
  • salt and pepper
  • creme fraiche (garnish)
  1. In large sauce pan, heat butter and olive oil. And onions and cook until translucent.
  2. Add parsnips and chicken stock, cover and let simmer 30 minutes.
  3. Add heavy cream and 1/4 tsp pf salt.
  4. Transfer to a blender and puree until smooth.
  5. Serve with a small drizzle of oil oil, a dollop of creme fraiche and a crack of salt and pepper.
