Sautéed swiss chard makes such a simple (delicious and nutritious) afternoon snack. These beautiful leaves were grown in the greenhouses of Poughkeepsie Farm Project. Just de-stem and wash the leaves. Toss them in a pan over medium high heat, and add a tiny bit of water to help stem them. I like to add minced garlic in as well. Cover and let cook 2-3 minutes, give a little stir and season with salt and pepper. Don't over cook though, you want nice bright greens with just a bit of texture!
