- 1 Apple, peeled and thinly sliced
- 2 T Olive Oil
- 1 Onion, thinly sliced
- 1 lb Kale, tough stems and ribs removed and leaves coarsely chopped
- Heat oil in a 5-quart pot, then add onion and sauté over medium high heat until golden, stirring occasionally. Add apple and sauté, stirring, until apple is almost tender, about 2 minutes.
- Add kale and 1/2 C water. Cook uncovered, stirring occasionally, until kale is tender and most of liquid is evaporated.
- Season with salt and pepper.
