Kohlrabi Slaw

Vinaigrette: (a good ratio here is also 3 parts oil to 1 part acid)

  • fish sauce
  • roasted sesame oil (use this sparingly, after you make the vinaigrette to add a touch of complexity)
  • canola oi, or any other neutral oil
  • honey
  • Lime juice
  • lime zest
  • rice vinegar
  • ginger, minced
  • chile, minced (jalapeno or serrano) you can omit it if you don’t like chiles.
  1. Mix all ingredients in a small mixing bowl

Slaw:

  • kohlrabi, peeled and julienne, thin strips. If you have a mandolin, have at it, but watch your fingers
  • roasted salted peanuts, lightly crushed with the back of your knife or pulsed in a food processor
  • cilantro, leaves only
  • mint, leaves only
  • scallions, sliced thinly

Finish:

  1. Toss all ingredients together, season with salt and pepper
