Vinaigrette: (a good ratio here is also 3 parts oil to 1 part acid)
- fish sauce
- roasted sesame oil (use this sparingly, after you make the vinaigrette to add a touch of complexity)
- canola oi, or any other neutral oil
- honey
- Lime juice
- lime zest
- rice vinegar
- ginger, minced
- chile, minced (jalapeno or serrano) you can omit it if you don’t like chiles.
- Mix all ingredients in a small mixing bowl
Slaw:
- kohlrabi, peeled and julienne, thin strips. If you have a mandolin, have at it, but watch your fingers
- roasted salted peanuts, lightly crushed with the back of your knife or pulsed in a food processor
- cilantro, leaves only
- mint, leaves only
- scallions, sliced thinly
Finish:
- Toss all ingredients together, season with salt and pepper
