Wheatley Farms Sweet Italian Sausage With Pickled Vegetable Apple Slaw by Matt Joyce of PRIME at the Plaza

·       Quick Pickled Turnips and Carrots

Quick Pickled MX Morningstar Turnips and Lineage Farms Carrots

1. Peel carrots and turnips and thinly slice or julienne into uniform pieces.*Set aside.

Pickling Liquid

·       3 TBSP Brown Sugar 1 Bay Leaf

·       2 tsp Kosher Salt

·       2 Cups Rice Vinegar

1.     Combine pickling liquid ingredients in a saucepan and bring to boil.

2.     Remove pan from heat and add vegetables.

3.     Pour vegetables and liquid into a bowl until ready to use

4.     Place sausage in a baking dish and roast for 15 minutes at 350 degrees.

5.     Slice roasted sausage into 3­4 pieces and set aside.

6.     Heat sauté pan on medium low heat and place sausage and drippings in pan.

7.     Cook for 3­4 minutes until all sides are browned.

8.     Turn heat to low and add pickled vegetables, toss and stir ingredients in the pan to coat evenly.

9.     To finish, grate Wright’s Farm apples to your taste over the cooked sausage and warmed vegetables.

This dish will provide a sweet, savory, tart, and rich flavor profile. As with any recipe this is a guideline. Season with salt and pepper to your liking.

*Carrot and turnip trimmings can be used to enrich the chicken broth
